Breakfast is the most important meal of the day, but busy mornings can leave you running out the door, skipping it entirely. Since getting up earlier is not always an option, it’s helpful to have a healthy breakfast snack ready to grab and go. For this reason, today I’ll be sharing one of my favorite, morning rush snacks, healthy chocolate chunk muffins.
Why These Chocolate Chunk Muffins are “The Best”
Spending money on healthy food is typically costly. But these muffins are inexpensive to make, and many affordable substitutions (at the bottom) can be made. Also, having food ready to grab in the morning will save you from spending at the drive-thru.
It’s hard to find healthy versions of baked goods that are also delicious. This one only has a few simple, minimally processed, and easy-to-find ingredients. Ones that most people already have in their pantry. Also, you get to use up old bananas.
You can store these in the fridge or freezer for later. Not to mention, they’re quick and easy to make.
How Can Chocolate Chunk Muffins be healthy?
Healthy baked goods sound too good to be true, right? An alternative to using refined sugar and highly processed ingredients, these muffins are made with whole, healthy foods. They’re really more like banana oatmeal muffins, but more indulgent.
Instead of flour, oats are what make these muffins. Oats are whole grains filled with many nutrients and antioxidants. These have very low sugar for a muffin, and high fiber, making them great for digestion and low-FODMAP diets.
Furthermore, they’re made at home. You don’t have to eat products pretending to be healthy. You’ll know exactly what you’ve put in. Using products from the right brands, these muffins can be made gluten-free as well.
Recipe: Healthy Banana Chocolate Chunk Muffins
Ingredients:
- 3 small (or 2 large) overripe bananas
- 3 1/2 cups of quick oats
- 2 cups of milk
- 1/3 cup honey
- 1 large egg
- 3 Tbsp. olive oil
- 1 1/2 tsp. baking powder
- 2 tsp. pumpkin pie spice
- 2 tsp. vanilla
- 1/4 tsp. salt
- 1/4 cup chocolate chunks
Baking Instructions
- Preheat the oven to 350°F. Apply cooking spray, or lightly grease a 12-cup muffin pan.
- In a large bowl, use a fork to mash the bananas.
- Add the oats and milk to the bananas and stir until evenly mixed. If you have time, leave the mixture for a few minutes to allow the oats to absorb the liquid.
- Mix in the remaining ingredients.
- Fill each muffin cup until it’s just above level with the pan. If you wish to garnish the muffins, put the toppings on now. I suggest putting more chocolate chunks, or a thin banana slice with some oats sprinkled on.
- Bake on the center rack for 35 minutes or until a knife comes out clean. The muffins will rise a bit, and you should see the muffins start to brown around the edge where they contact the pan.
- Leave the muffins in the pan for 10 minutes, then slide a knife around them to easily pop them out.
- Any remaining muffins can be kept in the fridge for up to 5 days. You can freeze them in a sealed freezer bag for up to 3 months.
Substitutions for Banana Oatmeal Muffins
For this recipe, I used no-name quick oats, but any oats will work. The same applies to the milk. Also, any cooking oil can be used in the same quantity. Not keen on chocolate chunks? Throw some cranberries and walnuts in instead!
Also, this recipe can be made without egg or milk. I baked another batch omitting the egg and milk, and replacing them with 2 1/4 cups of water. The muffins came out less fluffy, but still delicious!
In addition, you can leave out the honey or replace it with maple syrup or agave to make the muffins completely vegan. The links will take you to my recommended products. Check them out!
